The base of the wine is 100% Chardonnay, but a splash (approximately 2% of volume) of Vin Jaune (the regions famous \u003cem\u003eyellow wine \u003c\/em\u003ebarrel aged under flor yeast for 7 years) is added immediately, prior to bottling (an inspired variation to typical dosage method), giving the with awesome complexity in both aroma and palate.
