Assyrtiko is one of the greatest grape varieties in the world - we'll die on that hill. This is one of the most outstanding examples we know of. Über complex, rich and textured but precise, fine and pure. This is made from parcels of the most aromatic Assyrtiko on the island of Santorini, given away by the wine's salty, lemony character that is so classic of the grape. On the nose the wine is citrusy, floral and has notes of young stone fruits with a lovely toasty spice and a touch of smoke. The wine has great freshness on the palate and the salty, mineral complexity builds to a long, tangy finish.
The wine is fermented in stainless steel, French oak, American oak (some new, some used) and acacia barrels, and each barrel is fermented independently, each kick-started by wild yeasts strains. So each component of the resulting blended wine is slightly different from one another - this is the sort of thing that gets wine geeks going.
