Zip, smack and pow. This Txakoli practically sizzles as it glides over your tongue. Pure as glacial water but with with a ferocious bite. Citrusy and salty, reminiscent of the Cantabrian sea breezes that whip across the Basque region. A soft spritz makes the palate as exciting and intense as the nose. Very dry. A truly perfect aperitif when the sun shines on a warm Summers afternoon. Txakoli (pronounced cha-co-li) comes from the Basque country on the cool, green Atlantic coast of Spain. The Hondarribi Zuri grape variety was brought over from the northeast of Europe in the Middle Ages. The monks that followed the camino de Santiago pilgrimage route created monasteries with vineyards as they travelled. Today, you'll still find Txakoli poured in the Pintxos bars of San Sebastian as a nod to their heritage.
