Why You'll Love It
A classic sweet PX with an extraordinary depth of flavour. Raisins and figs turn into dark chocolate, espresso and molasses, yet the finish has enough savoury complexity to keep you coming back. Just a small glass is an excellent ending to dinner.
About The Producer
Valdespino is one of the great historic names of Jerez, with roots traced to Alfonso Valdespino in the thirteenth century and commercial records dating back to the fifteenth. Unlike many sherry houses, it owns substantial vineyards, including prized albariza plots in the Macharnudo pago, and has long been admired for single-vineyard wines, traditional soleras and extended ageing. The bodega became part of the Estévez family business in 1999, and its range now spans finely detailed Finos, ancient oxidative sherries and some of Andalucía's most distinctive aperitifs. The wines retain a strong sense of Jerez's vineyards and the extraordinary complexity that patient ageing can bring.
Winemaking Information
Pedro Ximénez grapes are sun-dried on esparto grass mats until intensely concentrated, then pressed and allowed to ferment slowly. Fermentation is arrested by fortification to 17% ABV, and the wine enters the El Candado solera for oxidative ageing in old American oak. Average maturation is around ten years. Published residual sugar is approximately 400–420 g/L. The product is sold here in a 37.5cl half bottle.
