About The Producer
Domaine Fournillon et Fils is a long-established family estate based in the small village of Bernouil, just north of Chablis. The Fournillon family, headed by Pascal, has been growing Chardonnay here for generations with a straightforward approach that puts freshness and drinkability front and centre. These days, Pascal is making more wines under his own name than selling the fruit on as has been the case in the past. The wines are made simply with minimal intervention and very little oak, allowing the natural character of the region to shine through. 
Winemaking Information
Produced from vineyards surrounding the village of Bernouil, just north of Chablis, this wine is grown on the region's famous Kimmeridgian limestone soils, rich in fossilised oyster shells. The grapes are hand-harvested before gentle pressing and cool fermentation in stainless steel to preserve purity and freshness. The wine then rests on its fine lees for several months, adding a subtle creaminess while allowing the vibrant fruit and unmistakable mineral character of Chablis to take centre stage.
