About The Producer
Domaine Orion is an exciting small estate in Préhy, at the south-western edge of Chablis. Léa Schaller, the third generation of her family to grow vines here, established her own domaine in 2019 after moving away from selling the grapes to the local cooperative. She named Orion after a Metallica song and has made a point of keeping the wines fresh and expressive. Her vineyards are managed without herbicides, and fermentations take place with indigenous yeasts in stainless steel, allowing Chablis' limestone character to come through clearly.
Winemaking Information
Chardonnay from vineyards near Préhy on Chablis' Kimmeridgian limestone and marl. The grapes are fermented spontaneously with indigenous yeasts in stainless steel, where the wine also matures, with no oak influence. Light fining and filtration before bottling retain a clean, crisp, mineral profile.
