About The Producer
Pedro Olivares is a restless, highly individual Spanish winegrower who has devoted his work to rediscovering old vines and unusual sites across southeastern Spain. His Vinos Bio project applies organic and biodynamic principles, alongside what he calls multidynamic agriculture, looking at the whole relationship between soils, vines and their surroundings. Working at altitude and with a light hand in the cellar, he produces tiny, expressive cuvées from native Mediterranean grapes. La Muscat shows his talent for making an aromatic variety feel textured, savoury and distinctly grown-up.
Winemaking Information
Made from Muscat, known locally as Moscatel Romano, using organically farmed fruit and low-intervention techniques. Fermentation takes place with indigenous yeasts, and lees contact helps build the wine's rounded texture and savoury depth. The producer describes this as a deliberately less overtly aromatic expression of Muscat. The precise duration of skin contact and lees ageing for the 2023 bottle has not been independently confirmed.
