About The Producer
François Chidaine has been central to the revival of Montlouis-sur-Loire as a source of outstanding Chenin Blanc. An early advocate of biodynamic viticulture, he farms individual parcels with close attention to their soils and seasons, making wines that combine ripe fruit, precision and remarkable ageing potential. Les Bournais is one of his most distinctive vineyard expressions.
Winemaking Information
Chenin Blanc from biodynamically farmed vines on clay-limestone soils above tuffeau limestone. The grapes are gently pressed and fermented with indigenous yeasts in 600-litre oak demi-muids, sometimes over several months. Malolactic fermentation is avoided and the wine is aged on fine lees to build texture while retaining its precise acidity.
