Why You'll Love It
A great introduction to traditional Banyuls. Five years in an old wooden vat soften the sweet Grenache fruit and add savoury, nutty complexity. Generous without becoming cloying, and particularly good with dark chocolate or blue cheese.
About The Producer
Cave de l'Abbé Rous works with growers around Banyuls-sur-Mer and Collioure, where steep terraced vineyards meet the Mediterranean. The Baillaury wines take their name from the local stream and are matured in the region's traditional fortified-wine style.
Winemaking Information
A traditional sweet Banyuls from approximately 50% Grenache Noir and 50% Grenache Gris. Fermentation is stopped by fortification, with the grapes macerated on skins for around ten days. The wine is aged for five years in a huge, approximately 200-year-old wooden vat formerly belonging to Byrrh. Technical specifications report 16% ABV and approximately 98g/L residual sugar.
