Why You'll Love It
Think of this as Blanc de Noirs Champagne at half the price. This Crémant de Bourgogne is made from 100% Pinot Noir in the same traditional method as Champagne, matured for over 20 months before release. This is soft, refreshing and totally crowd pleasing. Crisp, fresh fruit and floral tones speak louder than the subtle (but pleasing) brioche richness. At once elegant and unpretentious. Great for a toast, certainly. But equally at home with shellfish or the rich, creamy cheeses of Burgundy. It's a shame about the shit label...
About The Producer
Domaine Fournillon et Fils is a long-established family estate based in the small village of Bernouil, just north of Chablis. The Fournillon family, headed by Pascal, has been growing Chardonnay here for generations with a straightforward approach that puts freshness and drinkability front and centre. These days, Pascal is making more wines under his own name than selling the fruit on as has been the case in the past. The wines are made simply with minimal intervention and very little oak, allowing the natural character of the region to shine through.
Winemaking Information
Sourced from Pinot Noir vineyards around Bernouil and Épineuil, just north of Chablis, the grapes are harvested by hand before undergoing a gentle pressing. The wine is made using the Traditional Method, exactly as Champagne is, with a second fermentation taking place in bottle. It then spends over 20 months ageing on its lees, building fine bubbles and subtle brioche notes while retaining the bright fruit and mineral freshness that define northern Burgundy.
