Why You'll Love It
This is a top grower Champagne producer's provocative, rule-breaking, slutty side project. A sparkling wine from vineyards around Molesme, right on the Burgundy-Champagne border.
Bone dry and energetic, it combines the richness of extended ageing with the tension and freshness of a zero-dosage (no added sugar) finish. Flavours of baked apple, citrus peel, peach and brioche sit alongside nutty and herbal notes. The palate is rich, yet vibrant, with fine bubbles and a salty mineral finish.
If you enjoy grower Champagne, pét-nat or characterful natural wines, this sits beautifully between those worlds. Serve with oysters, sashimi, seafood or hard cheeses. Heaven.

About The Producer
Vincent Couche is one of Champagne's true pioneers of biodynamic viticulture. Based in the Aube, he took over the family estate in 1999 and embarked on a radical transformation of both vineyard and cellar practices. Working with renowned soil expert Claude Bourguignon, he replanted vineyards and adopted biodynamic farming long before it became fashionable. His estate became the first in Champagne to achieve Demeter certification for both vineyard and winery. Today, Couche is regarded as one of the region's leading natural-minded growers, producing wines with minimal intervention, native yeasts and a relentless focus on soil health, authenticity and terroir expression.
Winemaking Information
This multi-vintage sparkling wine is made from Pinot Noir and Chardonnay grown on clay and limestone soils. Fermentation takes place with indigenous yeasts, with the wine ageing between six months and four years in a combination of oak barrels and tank before spending a further year on lees. Bottled without fining or filtration, with no added sulphur and zero dosage, it is a pure expression of Vincent Couche's low-intervention philosophy.
