Why You'll Love It
I've tasted a lot of Sancerre. As one of the most classic regions of France, it is a shame that lots of the juice coming from the appellation is bland and ubiquitous. But here, at Domaine Hippolyte Reverdy, the wines are electric and exciting. With notes of freshly picked spring flowers, lime and a zesty, mineral finish, this is a real treat wine if you love the classics. Quite something alongside a good cheeseboard (especially a good goats cheese), smoked salmon, shellfish, or a brilliant pick-me-up at apero hour...
About The Producer
There are half a dozen or so Reverdy producers in the Loire, but it's Hippolyte Reverdy to look out for. With a history stretching back to the 1600s, the current generation are doing their ancestors proud by continuing to produce small scare Sancerre with great respect for the land and the traditions of the region.
Domaine Hippolyte Reverdy is one of the classic family estates of Verdigny, with roots in Sancerre stretching back to the 16th century. Today, Michel Reverdy farms 14 hectares of Sauvignon Blanc and Pinot Noir, managing every aspect of the domaine himself. Working sustainably across a patchwork of small vineyard parcels, he produces wines that are regarded as benchmarks for traditional Sancerre, combining purity, precision and a strong sense of place.

Winemaking Information
Sauvignon Blanc is sourced from 20 small vineyard parcels around Verdigny in Sancerre, planted on a mix of Kimmeridgian limestone-clay and stony limestone soils. After harvest, the grapes are gently pressed and the juice is allowed to settle for around 36 hours before fermentation in temperature-controlled stainless steel tanks. The wine then spends 2–3 months on its fine lees, with occasional stirring to build texture and complexity, before being bottled in the spring following harvest.
