Babalù showcases Sicily's ability to make bright, fresh wines despite the island's warm climate. Its vineyards sit around 200 to 300 metres above sea level, where cooler nights and coastal winds help retain acidity. Earlier picking keeps the style lively, with clean fruit at the forefront.
Winemaking Information
Grapes are harvested early in the day and gently pressed, with a short cold maceration before cool fermentation in temperature-controlled stainless steel. Time on lees, with occasional stirring, adds texture; malolactic fermentation is avoided to preserve freshness.
