Here we have a great example. Juicy white peach and honeydew melon with a touch of grapefruit and ginger to lift the palate. Soft, harmonious and eminently drinkable as a lunchtime aperitif, or with a bowl of seafood pasta.
About The Producer
Sibiliana Viti is part of Cantine Europa, one of Sicily's largest and most progressive wine cooperatives, representing thousands of hectares of sustainably farmed vineyards across western Sicily. Named after the historic Torre Sibiliana, a coastal watchtower overlooking the Mediterranean, the winery is dedicated to showcasing Sicily's indigenous grape varieties through modern, quality-focused winemaking. The Sensale range highlights the island's native grapes in a fresh, approachable style, offering exceptional value while staying true to their Sicilian roots.
Winemaking Information
The Grillo grapes are harvested during the cool of the morning before being gently pressed at very low pressure to preserve their delicate aromatics. After clarification, the juice is fermented at cool temperatures (16–18°C) in stainless steel tanks, where it remains for a short period before bottling. No oak is used, allowing Grillo's naturally vibrant citrus fruit, minerality and refreshing acidity to shine through.
