Silky, creamy and full of indigenous, Tuscan personality from ancient, almost forgotten land and varieties. Juicy peach, pineapple and lemon zest. On the palate, the wine is weighty and creamy, but still fresh. Lots of structure - even a faint tannin from some light skin contact. Flavours of grapefruit and fresh elderflower zing along a persistent, savoury finish.
About The Producer
Avignonesi is one of Tuscany's most forward-thinking estates and the largest biodynamically certified winery in Italy. Under the ownership of Virginie Saverys, the winery has embraced regenerative farming, indigenous yeast fermentations and a philosophy of allowing each vineyard to express itself naturally. The Da•Di range represents the estate's spirit of experimentation, using traditional materials such as terracotta amphorae alongside innovative winemaking techniques to explore the potential of Tuscany's lesser-known native grape varieties. The name Da•Di, meaning "great earth", reflects the estate's belief that great wines begin with healthy, living soils.
Winemaking Information
Da•Di Bianco is Avignonesi's most experimental white wine, bringing together four native Tuscan grape varieties, each vinified differently to highlight its individual character. Orpicchio is fermented in amphora and seasoned barriques, Vermentino in amphora, Grechetto undergoes carbonic maceration, while Trebbiano spends 48 hours on its skins before pressing. The components are aged on their fine lees before being blended, creating a wine with remarkable texture, freshness and complexity while remaining beautifully precise.
