Why You'll Love It
Tavel isn't made for the swimming pool or the picnic blanket. It's the original gastronomic rosé (the French would hardly acknowledge the existence of another style...). Qu'est Qu'on Attend? has all the juicy raspberry and wild strawberry fruit you'd hope for of Tavel, but it's backed up by rose petal, orange peel, herbs, spice and a subtle savoury edge. There's plenty of texture here too, making you question whether this should be categorised as a rosé or a light red. Who cares?!

Serve it with grilled lamb and sweet red peppers from the barbecue, charcuterie or Mediterranean dishes.
About The Producer
Château Boucarut is one of the Rhône's most exciting new names. Founded in 2017 by Saskia and Maurice Goetschy after leaving careers in Luxembourg, the estate sits in Tavel and Lirac on the right bank of the Rhône. They were drawn to the region's incredible terroir and set about farming organically with a philosophy centred on biodiversity and minimal intervention. Their wines are full of energy, freshness and authenticity, earning praise from critics despite the estate's relative youth. Rather than making polished, formulaic Rhône wines, Boucarut aims to let each vineyard speak for itself, producing bottles with real personality and a genuine sense of place.
Winemaking Information
The fruit comes from a single parcel in the Vestides area of Tavel, where old bush vines grow on limestone scree over clay soils. The grapes are hand-harvested into small crates before undergoing several days of whole-bunch maceration to build colour, texture and complexity. Fermentation takes place naturally in concrete tanks with indigenous yeasts, without added sulphur. The wine is bottled unfined and unfiltered, with only a tiny sulphur addition at bottling to ensure stability.
