Cibonne's Tradition rosé is simply one of the iconic rosés of the world. Be warned, this is no poolside quaffer. Rather, a spicy, smoky, textural, gastronomic marvel. Glistening with clementine, apricot, rose petal, blood orange, sweet spices and a lick of the salty Mediterranean sea. The palate is voluptuous, but not without freshness and refinement through hints of white truffle and bags of racy acidity. Wildly layered and complex, but ultimately, delicious. The most amazing wine pairing with traditional Provençal bouillabaisse with rouille.
Clos Cibonne dates back to the 17th century and is one of eighteen in Provence with Cru Classé status. They are the renowned custodians of a special grape variety: Tibouren. Grown in a vineyard located by the Mediterranean sea, on a hill of the Maures Mountains, overlooking Toulon’s harbour on the west and the Giens peninsula on the east. It was here in the 1930s that André Roux decided to devote his vineyards to Tibouren, which had been in drastic decline since the phylloxera blight. Clos Cibonne draws its name from Jean-Baptiste de Cibon, captain of Louis XVI's Royal navy and first owner of the vineyard.
Today’s wines are from organic vineyards, expertly executed and wrapped in beautiful, timeless labels, unchanged for nearly a century. Along with the likes of Domaine Tempier, they’re among a rare group of Provençal producers proud to cellar their rosé. The complicated layers of this generous and textural style of rosé will age for years to come.
