About The Producer
Laurent Lebrun trained as a winemaker in Montpellier, spent his formative years training in Australia and then returned to France to take up the position of General Manager and Head Winemaker at Château Olivier, Grand Cru Classé in Bordeaux. He has recently taken over the running of his family estate in Pouilly-Fumé which makes classic, elegant, flinty wines from 9 hectares of vines on the slopes of St. Andelain.
Winemaking Information
The Sauvignon Blanc grapes are harvested at optimal ripeness and quickly transported to the winery. Following a gentle, slow pressing, the juice is cold settled before fermentation in temperature-controlled stainless steel tanks at 16–18°C. The wine is then matured on its fine lees for 4–6 months, adding texture and complexity while preserving the freshness, purity and mineral character of the fruit.
