About The Producer
Payten & Jones is the work of Troy Jones and Behn Payten, two school friends making wine together in the Yarra Valley. Their approach is playful but serious where it matters, working with sustainably grown fruit, spontaneous fermentation and minimal intervention in the cellar. Alongside the region’s familiar Pinot Noir and Chardonnay, they have built a reputation for characterful wines from varieties such as Sangiovese, Syrah and Mataro, often accompanied by labels that refuse to take themselves too seriously.
Winemaking Information
Made from Mataro, also known as Mourvèdre or Monastrell (oh, and it's also known as Balzac), sourced from Victoria’s Yarra Valley. The fruit underwent a spontaneous wild-yeast fermentation before spending nine months on its skins, an unusually extended maceration that builds savoury complexity without making the wine feel heavy. Bottled at 13% ABV, it is medium-bodied, textural and deliberately minimal-intervention in style.
